I usually use a headband in these conditions. Various ear warmers are also available, with one of the more popular being Ear Mitts. People who have Ear Mitts rave about them. They slip over the ears and can be easily removed and stowed in a pocket if you want.

Those ear mitts are ... interesting. I'm skeptical about them staying on, but with the good reviews you've heard, I'm certainly give 'em a shot. I currently use what I guess I'd call an head-ear-band, a strip of padded cloth that goes all the way 'round, and is wider where it fits over the ears. Very comfy, very compact.
